You don't really need a chicken to make some great chicken soup. Saute your chopped onion and celery with some garlic in er or olive oil until translucent. Add chicken broth and chopped carrots along with thyme, a little rosemary, kosher salt and fresh ground pepper. If you prefer a rice based soup, add 1/2 cup and cook in broth, or you can add your pasta. For a twist, consider adding some lemon juice and beaten egg yolk to thicken (greek lemon soup).
